FETTUCCINE ALL’ALFREDO


Ingredientes350 gramas de fettuccine fresco
Sal grosso
30 gramas de manteiga
200 gramas de queijo grana padano ou parmigiano reggiano de meia cura ralados na hora
Água do cozimento do macarrão
Sal para temperar a água
Modo de prepararMacarrãoEncha uma panela com água e leve ao fogo. Para salgá-la, calcule 10 gramas de sal para cada 1 litro. Quando levantar fervura, junte o fettuccine e deixe cozinhar durante 2 minutos. Reserve a água do cozimento.
MolhoEm uma travessa, coloque a metade da manteiga, ¾ do queijo ralado e um pouco da água do cozimento da massa, apenas o suficiente para obter uma pasta cremosa e fluida. Separe o equivalente a uma xícara desse caldo salgado para ser utilizado mais adiante. Disponha o macarrão por cima do molho obtido e polvilhe o restante do queijo. Misture imediatamente com a ajuda de um garfo e uma colher, fazendo o movimento de baixo para cima. Se a mistura estiver muito espessa, acrescente um pouco mais do caldo do cozimento. Sirva em seguida.
Dica do chef: o queijo derrete entre 75º C e 85 °C. Tome cuidado para não ultrapassar essa média. Se o calor for muito intenso, os elementos proteicos se separarão da gordura, causando o efeito de “chiclete”. Caso a temperatura não atinja o mínimo, o resultado será igualmente indesejável: a mistura não fica cremosa. O grau de dificuldade desta preparação consiste justamente em manter a temperatura adequada.

We have the pleasure to tell you the history of our grandfather Alfredo Di Lelio, creator of “fettuccine all’Alfredo” (recipe in the world known).
Alfredo di Lelio opened the restaurant "Alfredo" in 1914 in a street in central Rome (Via della Scrofa), after leaving his first restaurant run by his mother Angelina in Piazza Rosa (Piazza disappeared in 1910 following the construction of the Galleria Colonna / Sordi). In this local spread the fame, first to Rome and then in the world, of "fettuccine all'Alfredo".
In 1943, during the war, Di Lelio gave the local to his collaborators.
In 1950 Alfredo Di Lelio decided to reopen with his son Armando his restaurant “Il Vero Alfredo” in Rome, Piazza Augusto Imperatore n.30, which is now managed by his nephews Alfredo (same name of grandfather) and Ines (the same name of his grandmother, wife of Alfredo Di Lelio, who were dedicated to the noodles).
